I have been SO excited to announce this BIG news that she will be joining our wonderful blog and now the wait is over.

Katie story:

Hi! my name is Katie Farrell, and I am the author of Dashing Dish. I started Dashing Dish as a side hobby while working full time as a nurse about 2 years ago. It all began because I wanted to encourage and inspire people to live a healthy lifestyle outside of my nursing job. At one time in my life, it was difficult to give up ‘junk’ food. This inspired me to get in the kitchen and learn to create healthy alternatives to the food I craved. I enjoyed my new lifestyle so much that I wanted to share my recipes with the world and teach people that you can eat what you love and live a healthy lifestyle at the same time.

Since beginning Dashing Dish, my life has changed in more ways than I could have imagined! I recently wrote a blog post called, “Life changing decisions” based on the decision that I made to leave my full time nursing job to pursue the ministry and business that God has been birthing in my heart for the past few years through Dashing Dish. Here is a snippet from that post that explains my journey in making this life changing transition…

“Around the same time that I graduated nursing school, and started my first nursing job, I also started Dashing Dish. I started this website with the thought that it was simply going to be a fun hobby. However, despite all my plans, I soon began to realize that that God had something different for my life than what I had in mind.

About six months after starting Dashing Dish, I started receiving hundreds of e-mails from women of all ages, from all around the world. Whether it was about losing unwanted weight or finding freedom in the areas of eating disorders, each woman had their own story.

I started to realize the great responsibility that God had given me with this website and that it was meant to share much more than recipes. I felt the Lord prompting me to share about the freedom and joy that can only be found in Him and to teach women how to find their true beauty in exchange for the ashes of their life.

The Lord also led me to Ezekiel 34 where He used this passage of scripture to tell me that there are sheep in need of a Shepard. I realized that by trying to ‘figure’ out my own future, I was ultimately caring for myself instead of His flock. It was then that I knew it was time to leave the ‘security’ of my nursing job and to jump full time into the business and ministry that He was calling me to.

In August {2011] I decided to step out in obedience. I had made the decision to listen to God…To care for others before myself. It was one of the hardest decisions I had ever made. It didn’t make sense to my head, and it certainly felt like I was ‘stepping out of the boat’. It’s funny how when we step out in faith, God never let’s us sink, (as long as we keep our eyes on Him).

On the day that I left my nursing job, God led me to the passage of scripture in 2 Timothy 4:5-6. It reads, “But you should keep a clear mind in every situation. Don’t be afraid of suffering for the Lord. Work at bringing others to Christ. Complete the ministry God has given you. As for me, my life has already been poured out as an offering to God.”

I knew that by making this decision, that I had taken the first step in ‘completing’ the ministry that God has called me to. I made the decision to pour out my life as an offering to God, and how could I not after Jesus gave His life for me!?!

During the ‘transitional’ phase of switching over to Dashing Dish full time, God began to flood my mind with ideas and ways that I could minister to people. Little did I know that God was about to lead me to a project that was far beyond myself. Something that I could have never dreamed up or accomplished on my own….And, it has been almost 9 months exactly in the making. (How cool is God!?!)

I have spent the last 9 months developing meal plans, new content, health coaching services, devotionals, and workout routines (and in the future~ a bible study series), that will all be featured on my new Dashing Dish website! I’m so excited to share all the new features that have been added and to share what God has put on my heart.”

That leads me to where I am today, the beginning of my new journey! I am excited and peaceful knowing that He is leading me, and I am humbled that the Creator of the Universe has a perfect plan for my life, (and the same goes for each one of you as well)!

I am excited to become a contributor at “Becoming a Strong Woman of God”, and I look forward to getting to know all of you!

Over the years, her passion to be healthy (spirit, soul, and body) combined with her love for cooking has led her to take her favorite recipes and alter them to make them healthy, while still tasting as close to the original as possible! 1 3/4 cup
Oats
3 Egg whites
3/4 cup Unsweetened cocoa
1/2 cup Unsweetened applesauce
1 tsp Vanilla extract
1/2 cup Plain greek yogurt (or regular plain low fat yogurt)
1/2 tsp Cream of tartar (or 2 tsp. vinegar)
1 1/2 tsp Baking powder
1 1/2 tsp Baking soda
1/4 tsp Salt
1 cup Hot water
1 cup Sugar substitute or 1/4 cup + 2 tbs baking stevia 1
1/2 cup Semi-sweet chocolate chips
Tip Foil cupcake liners, remove the inner paper lining (because paper liners tend to stick to muffins!)
1Or you could use 12-14 packets of stevia. It may vary according to taste and brand of stevia. I personally use NuStevia baking stevia and NuStevia packets.
